Description

A quick and easy Veggie & Halloumi Breakfast Sandwich made with fresh vegetables, grilled halloumi, and spicy mayo for a balanced morning meal.


Ingredients

2 panini breads (Arnold Ciabatta Rolls or La Brea Bakery Take & Bake Panini Rolls)

2 teaspoons Texas Pete® Original Hot Sauce (or Crystal® Hot Sauce or Sriraja Panich Hot Sauce)

3 tablespoons mayonnaise

1 handful lettuce leaves

1 carrot, thinly sliced

½ cucumber, sliced

1 tomato, sliced

1 block halloumi cheese (Dodoni Feta-Style Halloumi)

Fresh basil leaves

1 tablespoon olive oil for grilling


Instructions

1. Toast the panini bread until golden and slightly crisp.

2. Mix mayonnaise and your preferred hot sauce in a bowl to create a smooth spicy mayo.

3. Spread the spicy mayo on the bottom half of the toasted panini bread.

4. Layer lettuce, carrot, cucumber, and tomato slices neatly over the sauce.

5. Cut the halloumi into ¼-inch slices and grill in olive oil for 2–3 minutes on each side until golden brown.

6. Add the grilled halloumi slices over the fresh vegetables.

7. Top with basil leaves and drizzle a small amount of spicy mayo for extra flavor.

8. Add a bit more lettuce and close the sandwich with the top half of the panini bread.

9. Serve warm with Kalamata olives or a small salad.

Notes

Serve immediately for the best texture and flavor.

This sandwich pairs beautifully with a cup of tea or a light smoothie.

You can prepare the spicy mayo and sliced vegetables in advance to save time.

Grilled halloumi can be stored in the fridge for up to two days and reheated in a pan before assembling.
