Description

A quick and delicious Vegetarian Breakfast Bagel made with avocado, vegan egg, melted cheese, and plant-based bacon, served with a spinach and mushroom side for a wholesome and energizing morning meal.


Ingredients

1 bagel (Dave’s Killer Bread or Thomas’ Plain Bagels)

½ avocado

½ cup Just Egg (plant-based egg alternative)

1 slice vegan cheese (Follow Your Heart or Violife)

2 slices Plant-Based Bacon Umaro

1 cup baby spinach

½ cup sliced mushrooms

½ teaspoon garlic powder

½ teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste


Instructions

1. Toast the bagel until golden brown.

2. Cook the Just Egg in a nonstick pan for 2–3 minutes, flip, and cook another 2 minutes until set.

3. In another pan, cook the Lightlife Smart Bacon until crispy.

4. Mash or slice the avocado and spread it on the bottom half of the bagel.

5. Layer the vegan egg, vegan cheese, and crispy plant-based bacon.

6. Close the bagel with the top half and slice it in two.

7. For the spinach and mushroom side, heat olive oil in a pan and add mushrooms.

8. Cook for 3 minutes until softened, then add spinach.

9. Sprinkle garlic powder, onion powder, salt, and pepper.

10. Cook until spinach wilts and mushrooms are tender.

11. Serve warm beside the bagel and enjoy your breakfast.

You can prepare the vegan egg and mushrooms ahead of time for quick assembly.
