Ingredients
1.5–2 lb beef stew meat or ground beef
2 tbsp all-purpose flour
2 tbsp vegetable oil
⅓ cup apple cider vinegar or grape juice
1 tbsp minced garlic
1 tsp dried thyme
1 cup yellow onion, diced
4 oz mushrooms, sliced
1.5 cups carrots, sliced
1 cup green beans, fresh or frozen
2 tbsp Crystal Worcestershire sauce
5 cups beef broth
1 14-oz can diced tomatoes
6 oz long grain and wild rice (Uncle Ben’s)
Salt and pepper to taste
Optional: ¼-½ cup heavy cream
Instructions
1. Cut beef into 1-1.25 inch pieces and toss with flour
2. Brown beef in oil over medium heat until evenly seared
3. Deglaze the pan with apple cider vinegar or grape juice, scraping browned bits
4. Add garlic, thyme, carrots, onions, mushrooms, beef broth, Worcestershire sauce, and diced tomatoes; bring to a boil
5. Reduce heat, cover, and simmer for 1 hour
6. Add green beans and rice, stir, cover, and simmer until rice is cooked, about 20 minutes
7. Optional: stir in heavy cream before serving
8. Season with salt and pepper to taste and serve hot
