Ingredients
1 pound ground beef
1 small onion, chopped
1 1/2 teaspoons beef flavored Better than Bouillon
5 cups potatoes, diced
4 cups tomatoes, diced
3 cups cabbage, cut in bite-sized pieces
1/2 cup celery, chopped
1 cup frozen corn
1 teaspoon salt
1/2 teaspoon pepper
Water as needed to cover vegetables
Instructions
1. Brown ground beef and chopped onion in a skillet until fully cooked, then drain excess fat
2. Boil 1 cup of water in a Dutch oven and stir in the beef flavored bouillon until dissolved
3. Add the beef and onion mixture along with potatoes, tomatoes, cabbage, celery, and frozen corn
4. Pour enough additional water to cover all vegetables, bring to a boil, then reduce to a simmer and cover
5. Cook on low heat, stirring occasionally, until vegetables are tender, about 30-40 minutes
6. Alternatively, cook in a slow cooker on low for 4-5 hours or on high for 3-4 hours
7. Taste and adjust salt and pepper as needed before serving
Notes
Use Yukon Gold potatoes for even cooking; peel only if necessary
Frozen or canned vegetables save prep time
Add herbs like parsley or thyme for extra flavor
This soup can be stored in the refrigerator for up to four days or frozen for up to three months
