Description

Creamy vanilla oats with cashew butter baked into a crunchy and fragrant granola perfect for breakfast or snacking.


Ingredients

3 cups rolled oats

1 cup raw cashews

1/2 cup unsweetened shredded coconut

1 tsp ground cinnamon

1/2 tsp salt

1/2 cup cashew butter

1/2 cup maple syrup

1/3 cup coconut oil

1 tbsp alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor


Instructions

1. Mix cashew butter maple syrup coconut oil and vanilla flavor and warm briefly.

2. Combine rolled oats cashews shredded coconut cinnamon and salt.

3. Pour the wet mixture over the dry mixture and coat evenly.

4. Spread the mixture onto a baking sheet lined with parchment.

5. Bake at 325 degrees F for 30 to 35 minutes tossing once.

6. Let the granola cool completely before storing.

Notes

Toast the oats lightly before mixing for deeper flavor.

Add coconut sugar to make the granola sweeter.

Press the mixture before baking if you prefer larger clusters.
