Description

Creamy vanilla maple overnight oats made with rolled oats, almond milk, dates, maple syrup, pecans, cardamom, and alcohol free vanilla flavor. An easy make ahead breakfast for busy mornings.


Ingredients

6 dates pits removed and thinly sliced

1 cup old fashioned rolled oats

1 cup almond milk

1 tablespoon maple syrup

1/4 teaspoon cardamom

1/2 teaspoon vanilla paste or alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor

Pinch sea salt

1/4 cup pecans chopped


Instructions

2. Slice the dates into thin pieces.

3. Place all ingredients except pecans in a mason jar or small bowl.

4. Stir well until everything is combined.

5. Cover and refrigerate overnight so the oats soften and absorb the liquid.

6. Remove from the fridge the next morning and stir the oats.

7. Add chopped pecans just before serving.

Notes

Use old fashioned rolled oats for the best texture.

Add more almond milk in the morning if you prefer a thinner consistency.

Keep nuts out of the mixture until serving to maintain crunch.

Fruit such as berries or sliced bananas can be added right before eating.

The oats keep well for up to three days in the refrigerator.
