Description

Creamy Vanilla Coconut Overnight Oats made with rolled oats, coconut cream, chia seeds, and alcohol free vanilla flavor for an easy make ahead breakfast.


Ingredients

1 cup rolled oats

2 teaspoons chia seeds

1 cup non dairy milk

6 tablespoons coconut cream

1 tablespoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor

4 teaspoons unsweetened coconut flakes

4 teaspoons pure maple syrup optional but recommended

½ teaspoon coconut sugar

½ to 1 cup fresh fruit sliced optional

1 tablespoon chopped nuts or seeds optional

1 tablespoon nut or seed butter optional


Instructions

1. Set aside 2 or 3 resealable jars.

2. Add all ingredients to a mixing bowl and stir until completely blended making sure the coconut cream has no clumps.

3. Pour the mixture evenly into jars and seal tightly.

4. Refrigerate overnight so the oats can soften and thicken.

5. Stir before serving and add a splash of non dairy milk if you prefer a thinner texture.

6. Serve cold or warm gently in the microwave in short intervals.

7. Add toppings such as fruit, nuts, seeds, or nut butter before eating.

Notes

Store in airtight jars in the refrigerator for up to five days when using fresh ingredients and store bought milk.

Homemade milk shortens storage time to about three days.

Stir well before eating because coconut cream may naturally thicken or separate.

Adjust sweetness with maple syrup or coconut sugar if desired.
