Description

Creamy vanilla banana bread overnight oats made with mashed banana, rolled oats, cinnamon, nuts, maple syrup, and alcohol free vanilla flavor for a soft banana bread inspired breakfast.


Ingredients

1 half mashed ripe banana

1 half cup rolled oats regular or gluten free

1 half cup milk of choice

2 tablespoons chopped pecans or walnuts

1 teaspoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor

1 half teaspoon cinnamon

Small pinch of sea salt

1 tablespoon ground flax optional

2 teaspoons pure maple syrup


Instructions

1. Mash the ripe banana in the bottom of a bowl or jar that can be sealed.

2. Add the oats, milk, pecans or walnuts, alcohol free vanilla flavor, cinnamon, sea salt, ground flax if using, and maple syrup.

3. Stir until everything is fully combined.

4. Refrigerate overnight or at least four hours.

5. Enjoy cold or warm briefly before serving.

6. Top with sliced banana or extra nuts if desired.

Notes

Adjust the sweetness to taste since banana adds natural sweetness.

Best enjoyed within three days when mixed with banana.

For longer prep add mashed banana right before eating for servings beyond day three.

Use dairy free milk for a plant based option and gluten free oats if needed.
