Ingredients
1 ball pizza dough (Best Pizza Dough, Food Processor Dough, or Thin Crust Dough)
1 ½ cups sliced mixed mushrooms (baby bella, button, shiitake, oyster)
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh oregano
¼ teaspoon kosher salt
1 pinch kosher salt
1 tablespoon olive oil, plus more for drizzling
1 tablespoon fresh lemon juice
1 to 2 ounces goat cheese, crumbled
¾ cup shredded mozzarella cheese
1 to 2 tablespoons finely chopped chives
Semolina flour or cornmeal (for dusting pizza peel)
Instructions
1. Make the pizza dough and let it rest for 45 minutes.
2. Preheat oven to 500°F with a pizza stone inside.
3. Clean and slice mushrooms.
4. Heat 1 tablespoon olive oil in a pan over medium-high heat. Add mushrooms, thyme, oregano, and ¼ teaspoon salt. Cook 5 minutes.
5. Reduce heat, stir in lemon juice, then remove from heat.
6. Dust pizza peel with cornmeal or semolina flour.
7. Stretch dough into a 10–12 inch circle and place on peel.
8. Brush olive oil over the dough.
9. Add mozzarella, then mushrooms, then goat cheese.
10. Sprinkle chives, extra thyme, and a pinch of salt.
11. Transfer pizza to the oven and bake 5–7 minutes until golden brown.
12. Slice and serve immediately.

Use a blend of mushroom types for the best flavor.
Goat cheese adds tang and creaminess—substitute ricotta or feta if needed.
A pizza stone is ideal for crispy crust but a baking sheet can work too.
