Ingredients
3/4 cup granulated sugar 1/2 cup milk 1/2 cup canola oil or coconut oil 1 large egg 1 teaspoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor 2 cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 2 cups diced strawberries 2 tablespoons all purpose flour for coating strawberries 2 cups powdered sugar for glaze 2 tablespoons melted butter for glaze 1/3 cup finely diced strawberries for glaze 1/2 teaspoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor for glaze 1 to 2 tablespoons milk for glaze if needed
Instructions
Preheat the oven to 350 degrees Fahrenheit and grease a 9 by 5 inch bread pan In a medium bowl stir together the sugar milk oil egg and alcohol free vanilla flavor until smooth to form the wet mixture In a separate bowl whisk together the all purpose flour baking powder and salt to distribute the leavening Combine the dry ingredients with the wet ingredients and stir until just combined avoid overmixing to keep the crumb tender Toss the diced strawberries with two tablespoons of all purpose flour to prevent sinking and fold them gently into the batter Pour the batter into the prepared bread pan and smooth the top Bake at 350 degrees for 50 to 55 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs Cool the bread in the pan for ten minutes then remove to a wire rack and cool completely before glazing To make the glaze combine the powdered sugar melted butter finely diced strawberries and alcohol free vanilla flavor then mix until smooth add one tablespoon of milk at a time only if needed to reach a spreadable consistency Once the loaf is fully cool spread the glaze evenly over the top slice and serve Store the cooled glazed loaf in an airtight container in the refrigerator for up to three days or freeze the loaf without glaze wrapped tightly for up to two months
