Ingredients

Boneless skinless chicken breasts sliced lengthwise

Olive oil

Salted butter

Yellow onion diced

Green bell pepper diced

Celery diced

Fresh garlic minced

Water or chicken broth

Chicken flavored bouillon powder

Cream of chicken soup

Basmati rice rinsed well

Garlic powder

Onion powder

Smoked paprika

Cajun seasoning

Salt and black pepper


Instructions

Season the chicken generously on both sides with garlic powder, onion powder, smoked paprika, buttery poultry seasoning, and Cajun seasoning

Heat olive oil and part of the butter in a deep skillet over medium heat

Cook the chicken until golden on both sides and fully cooked then remove and set aside

Add remaining butter to the skillet and sauté onion, bell pepper, and celery until softened

Add garlic and cook briefly until fragrant

Stir in water or broth and chicken flavored bouillon while scraping up any browned bits

Mix in cream of chicken soup until smooth

Add rinsed rice and stir well

Bring to a gentle boil then cover and simmer on low heat until rice is tender

Chop or shred the cooked chicken

Return chicken to the skillet and stir gently to combine

Taste and adjust seasoning with salt and pepper

Serve warm

Notes

Rinsing the rice helps prevent a gummy texture and keeps the grains fluffy

A deep skillet with a lid works best to ensure even cooking

If the rice seems dry, add a small splash of broth and stir gently
