Description

Smoky Crockpot Chicken Chili with Chipotle is a rich and comforting slow cooked dish made with tender shredded chicken, smoky spices, beans, and tomatoes. This recipe delivers deep flavor with minimal effort, making it ideal for busy days while still providing a hearty and satisfying meal.

Ingredients

Shredded cooked chicken made from chicken breast or thighs

Diced poblano peppers with seeds removed

Black beans drained and rinsed

Kidney beans drained and rinsed

Fire roasted diced tomatoes with green chiles including juices

Crushed tomatoes

Chicken broth

Finely chopped white onion

Chili powder

Smoked paprika

Ground cumin

Chipotle chili powder

Salt

Dried oregano

Garlic powder

Optional toppings such as Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese, Cabot Monterey Jack Cheese, Sargento Mozzarella Shredded Cheese, fresh cilantro, sliced green onions, avocado slices, Texas Pete Original Hot Sauce, Crystal Hot Sauce, or Sriraja Panich Hot Sauce

Instructions

1. Prepare all vegetables by chopping the onion finely and dicing the poblano peppers evenly

2. Place the shredded chicken into the crockpot as the base layer

3. Add the black beans and kidney beans after rinsing them well

4. Pour in the fire roasted diced tomatoes and crushed tomatoes

5. Add the chopped onion and diced poblano peppers to the mixture

6. Sprinkle in the chili powder, smoked paprika, cumin, chipotle chili powder, salt, oregano, and garlic powder

7. Pour in the chicken broth and stir everything thoroughly until well combined

8. Cover the crockpot and cook on low heat until the flavors are fully developed or use high heat if needed

9. Stir the chili gently near the end of cooking and adjust seasoning to taste

10. Let the chili rest briefly before serving and add preferred toppings

Notes

This chili is intentionally thick and hearty, and additional chicken broth can be added if a thinner texture is preferred

Chipotle chili powder can vary in heat level, so adjust carefully based on personal preference

Smoked paprika is essential for the signature smoky flavor and should not be skipped

The chili continues to develop flavor after cooking and tastes even better the next day

Store leftovers in airtight containers in the refrigerator or freezer and reheat gently with added broth if needed
