Sixteen ounces diced green chiles

Instructions

Heat olive oil in a large skillet and cook the onions until soft and translucent then add garlic and all seasonings and cook until fragrant.
Pour the remaining broth into the skillet and gently scrape up any browned bits then transfer everything into the slow cooker.
Stir in the white beans the remaining hominy and the diced green chiles until evenly combined.
Season the chicken lightly with salt and pepper and place it into the slow cooker making sure it is fully submerged.
Cover and cook on low heat until the chicken is tender and easily shreddable.
Remove the chicken allow it to rest briefly then shred into bite size pieces and return it to the slow cooker.
Stir in the heavy whipping cream and fresh cilantro then adjust seasoning if needed.
Keep warm until ready to serve and enjoy.
Notes
Blending the hominy with broth creates a naturally thick and creamy texture without flour or starch.
Allowing the chili to rest briefly before serving helps the flavors fully develop.
This dish thickens as it cools and tastes even better the next day.
If the chili becomes too thick add a small splash of broth when reheating.
Fresh cilantro adds brightness but can be adjusted or omitted based on preference.
