Simple BLT Chicken Salad Cups made with turkey bacon, avocado, alcohol free Greek yogurt, fresh romaine, cherry tomatoes, and rotisserie chicken for a crisp and creamy meal.
Ingredients
5 slices uncured turkey bacon, chopped
1 large avocado, peeled and pitted
1/3 cup plain nonfat Greek yogurt such as Fage Total Zero Percent or Chobani Plain Greek Yogurt
1 tablespoon fresh lemon juice
1/8 teaspoon salt
1/4 teaspoon ground black pepper
8 large romaine lettuce leaves
2 1/3 cups chopped skinless rotisserie chicken breast meat
1/2 cup halved cherry tomatoes
2 green onions, thinly sliced
Instructions
1. Cook the chopped turkey bacon in a skillet over medium high heat until crisp, then transfer to a paper towel lined plate.
2. Mash the avocado in a medium bowl, then mix in the Greek yogurt, lemon juice, salt, and black pepper until smooth.
3. Lay out the romaine leaves and spread the avocado mixture evenly down the center of each one.
4. Top with chopped chicken, tomatoes, green onions, and the crisp turkey bacon.
5. Press the toppings lightly into the avocado mixture so everything stays in place before serving.
Notes
Use chilled ingredients for the best texture and freshness.
Choose firm romaine leaves so they hold the filling without tearing.
Pat tomatoes dry if they release too much moisture.
Prepare components ahead of time but assemble right before serving to keep the lettuce crisp.
