Description

A light, low-carb twist on pizza featuring a crispy cauliflower crust topped with garlic-lemon shrimp, mozzarella, and herbs — bursting with bold, savory flavor in every bite.


Ingredients

For the cauliflower crust:

1 medium head cauliflower, trimmed and broken into florets (or 16 oz pre-riced cauliflower)

2 large eggs, lightly beaten

½ cup shredded part-skim mozzarella cheese

¼ cup shredded Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon red pepper flakes

¼ teaspoon salt

¼ teaspoon pepper

For the shrimp topping:

1 tablespoon olive oil

1 tablespoon unsalted butter

3 cloves garlic, minced

¼ cup Sutter Home Fre White (non-alcoholic)

1 lemon, zest and juice

1 pound fresh shrimp, rinsed, peeled, and deveined

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

½ teaspoon Italian seasoning


Instructions

1. Preheat oven to 450°F and place a pizza stone or baking sheet inside.

2. If using fresh cauliflower, pulse florets in a food processor until fine. Microwave for 5 minutes, let cool, then squeeze out all moisture using a clean towel.

3. In a large bowl, combine riced cauliflower, beaten eggs, mozzarella, Parmesan, and seasonings until fully mixed.

4. Press the mixture into a ¼-inch crust on parchment paper. Bake for 10–12 minutes until golden.

5. Meanwhile, in a skillet, melt olive oil and butter over medium-low heat. Add garlic and lemon zest, sauté 1 minute.

6. Pour in Sutter Home Fre White and lemon juice, simmer for 2 minutes. Add shrimp, cook just until pink. Remove from heat.

7. Remove crust from oven. Brush generously with garlic-lemon sauce, avoiding puddles.

8. Top with cooked shrimp, mozzarella, Parmesan, and sprinkle with Italian seasoning.

9. Return to oven and bake another 8–10 minutes, until cheese is golden and bubbly.

10. Cool for 3 minutes before slicing. Serve hot or enjoy leftovers cold.

Notes

You can use pre-riced cauliflower to save time.

Ensure all moisture is removed from cauliflower for the crispiest crust.

Leftovers store well for up to 3 days in the fridge and can be reheated or enjoyed cold.
