Description

Savory Oatmeal Cups (Bake & Freeze) are a hearty, make-ahead breakfast or snack packed with flavor. These baked oatmeal cups feature rolled oats, herbs, cheese, and sun-dried tomatoes for a delicious, protein-rich option that can be stored or frozen for later.


Ingredients

1/2 tsp avocado oil

1/2 small yellow onion, chopped

2 garlic cloves, minced

1 1/2 cups rolled oats (gluten-free if needed)

1 large egg

3/4 cup oat milk or any nut milk

1/3 cup Tillamook or Cabot Parmesan Cheese, finely grated

1/4 cup sun-dried tomatoes in oil, roughly chopped

2 tbsp pitted olives

1/4 cup chopped parsley

2 tbsp chopped thyme

1/8 tsp sea salt


Instructions

1. Preheat the oven to 375°F (177°C) and lightly grease a muffin tin with avocado oil.

2. In a pan over medium heat, warm the avocado oil and sauté the chopped onion for 2 to 3 minutes until soft.

3. Add the minced garlic and cook for another minute until fragrant.

4. Reduce the heat to medium-low, add the rolled oats, and toast them for about 2 to 3 minutes until lightly golden. Remove from heat.

5. In a medium bowl, whisk together the egg, oat milk, grated cheese, sun-dried tomatoes, olives, parsley, thyme, and sea salt.

6. Add the cooked oat mixture into the bowl and stir until evenly combined.

7. Spoon the mixture evenly into the muffin tin compartments.

8. Bake for 20 to 25 minutes, or until the tops are firm and golden.

9. Cool for 10 minutes before removing from the tin. Serve warm, refrigerate, or freeze for later.

Notes

For extra protein, top each oatmeal cup with a poached or soft-boiled egg before serving.

Avoid overbaking to keep them moist and soft inside.

For dairy-free, use Violife Just Like Parmesan or Daiya Cutting Board Shreds.

Store in an airtight container for up to 5 days in the refrigerator.

To freeze, place cooled cups in a single layer, freeze solid, then store in a freezer-safe bag for up to 3 months.

Reheat in the microwave for 30 to 45 seconds or thaw overnight.
