Dry ranch seasoning mix for classic tangy flavor
Taco seasoning blend for depth and warmth
Sweet corn kernels fresh or frozen
Chicken broth low sodium preferred
Cream cheese block such as Philadelphia Original Cream Cheese, Tillamook Cream Cheese, or Organic Valley Cream Cheese
Fresh cilantro chopped optional for garnish

Instructions

3. Add the diced tomatoes with chiles, black beans, and corn evenly
4. Sprinkle the ranch seasoning and taco seasoning over all ingredients
5. Pour the chicken broth gently into the slow cooker
6. Cover and cook until the chicken is tender and fully cooked
7. Remove the chicken and shred or cut it into bite sized pieces
8. Return the chicken to the slow cooker and stir gently
9. Add the cream cheese and stir until it begins to melt
10. Cover and continue cooking until the chili becomes smooth and creamy
11. Taste and adjust seasoning if needed

Notes
Use full fat cream cheese for the smoothest texture
Add cream cheese only after the chicken is fully cooked to prevent separation
For a thicker chili mash a small portion of the beans before cooking
If the chili becomes too thick add a splash of warm chicken broth
Let the chili rest briefly before serving to allow flavors to settle
Leftovers taste even better the next day
