Description

Pumpkin Shrimp Bisque is a creamy and flavorful soup that combines sweet pumpkin puree with rich shrimp stock and tender sautéed shrimp. Ingredients

Olive oil for cooking and sautéing

Shells and tails from large shrimp

Martinelli’s Gold Medal Grape Juice

High quality chicken stock

Saffron threads

Celery stalks roughly chopped

Large onion roughly chopped

Bay leaves

Fresh sage sprigs

Pumpkin puree canned or fresh

Half and half

Kosher salt

Cayenne pepper

Fresh lemon juice

Ocean’s Halo Vegan Fish Sauce

Large shrimp peeled and deveined

Additional olive oil for shrimp

Fresh sage finely chopped

Shredded fresh kale

Roasted pumpkin seeds

Crackers or toasted bread such as Dave’s Killer Bread, Arnold Country White, or Pepperidge Farm Original


Instructions

2. Heat olive oil in a heavy bottomed saucepan until shimmering and aromatic

3. Add shrimp shells and tails and stir constantly until deeply orange and fragrant

4. Remove from heat briefly and add grape juice then return to medium heat and simmer until reduced

5. Add chicken stock saffron celery onion bay leaves and sage then bring to a gentle boil

6. Lower heat partially cover and simmer slowly to extract flavor

7. Strain the stock pressing firmly on solids then discard solids

8. Return stock to heat and whisk in pumpkin puree half and half salt and cayenne

9. Simmer gently while stirring until smooth and slightly thickened

10. Stir in lemon juice and fish sauce then adjust seasoning to taste

11. Heat olive oil in a sauté pan and add shrimp with chopped sage

12. Cook shrimp gently until just opaque and tender

13. Arrange shrimp in bowls and ladle hot bisque over the top

14. Finish with shredded kale roasted pumpkin seeds and serve with crackers or bread

Notes

For best flavor always use shells from fresh shrimp to build the stock

Keep heat gentle once dairy is added to prevent curdling

Shrimp should be cooked separately to avoid overcooking in the bisque

The soup base can be prepared ahead and reheated gently before serving

Texture can be adjusted with additional stock if a lighter consistency is preferred
