This Portobello Mushroom Burger Recipe is a juicy, umami-packed, plant-based alternative to traditional burgers. Perfectly grilled mushrooms with bold marinades and fresh toppings make this an easy and flavorful meal any day of the week.

Ingredients

4 large portobello mushrooms

Extra-virgin olive oil, for drizzling

Balsamic vinegar, for drizzling

Tamari, for drizzling

Sea salt and freshly ground black pepper

4 hamburger buns, warmed or toasted, See Easy Homemade hamburger buns Recipe

Lettuce

Sliced tomato

Sliced red onion

Pickles

Ketchup, mayo, and/or mustard

Pesto, Guacamole, or Chipotle Sauce

Instructions

1. Remove stems and clean portobello mushroom caps with a damp cloth or paper towel.

2. Place mushrooms in a shallow dish. Drizzle with olive oil, balsamic vinegar, and tamari.

3. Sprinkle with salt and pepper. Rub the seasonings in on both sides.

4. Heat a grill or grill pan over medium heat.

5. Place mushrooms gill-side up on the grill. Cook for 5 to 7 minutes per side until tender.

6. Remove from grill and let rest for 1-2 minutes.

7. Assemble burgers by placing grilled mushrooms on toasted buns.

8. Add lettuce, tomato, onion, pickles, and your choice of condiments and sauces.

9. Serve immediately.

Notes

You can marinate the mushrooms up to 24 hours in advance for deeper flavor.

Try different sauces like chipotle mayo or pesto to add variety.

For a low-carb option, use lettuce wraps instead of buns.
