Description
These homemade pizza pot pies are a comforting, cheesy twist on traditional pizza. Baked in individual ramekins with layers of sauce, mozzarella, and golden crust, they’re fun to make and delicious to eat.
Ingredients
1 large pizza dough recipe
1 cup pizza sauce
8 slices mozzarella cheese (not fresh), halved
4 slices Provolone cheese
Additional toppings as desired (vegetables, cooked chicken, olives)
Baking spray (for greasing)
Optional: extra sauce for layering
Instructions
1. Preheat oven to 400°F.
2. Spray four 10-ounce ramekins with baking spray, including sides, and place on a baking sheet.
3. Place halved mozzarella slices in each ramekin, short sides meeting in the center.
4. Add 2 tablespoons of pizza sauce over cheese.
5. Add optional toppings like mushrooms or peppers, being careful not to overfill.
6. Add more sauce if desired.
7. Top with a slice of Provolone cheese.
8. Divide dough into 4 equal parts. Stretch each into a circle 1 to 1½ inches wider than ramekin top.
9. Cover ramekin with dough and gently seal around the edge.
10. Bake for 15 to 25 minutes until crust is golden brown.
11. Remove from oven and cool slightly. Invert ramekins onto plates.
12. Use a knife or tongs to help release crust from ramekin, if needed.
Notes
Use firm mozzarella, not fresh, to avoid excess moisture.
Make sure ramekins are oven-safe (e.g., Pyrex).
If using raw meat, cook and cool it before adding.
Extra dough can be used for cheesy breadsticks or flatbread.
Homemade dough gives better flavor but store-bought works in a pinch.
