Description
A fun and cheesy Pizza Cupcakes Recipe made in a muffin tin with gooey mozzarella, tangy pizza sauce, and savory toppings. Perfect for snacks, parties, or lunchbox meals.
Ingredients

8 medium cherry tomatoes, finely chopped and drained
1 (11 ounce) can refrigerated pizza crust
8 teaspoons shredded mozzarella cheese (for base)
8 tablespoons pizza sauce
8 teaspoons finely chopped red onion
8 tablespoons shredded mozzarella cheese (for topping)
8 slices Beef pepperoni, quartered
1/4 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
1/4 teaspoon garlic salt
Instructions
1. Preheat the oven to 400°F (200°C). Spray 8 muffin cups with cooking spray.
2. Roll out pizza crust on a floured surface into a thin rectangle.
3. Use a 4-inch cutter to cut 8 circles. Press dough circles into the greased muffin tin cups, covering the bottom and sides.
4. Place 1 teaspoon mozzarella cheese in the bottom of each dough cup.
5. Add 1 tablespoon of pizza sauce on top of the cheese in each cup.
6. Add chopped cherry tomatoes and red onions to each cup.
7. Sprinkle 1 tablespoon of mozzarella cheese on top of the vegetables in each cup.
8. Top with quartered Beef pepperoni slices and sprinkle with Italian seasoning, red pepper flakes, and garlic salt.
9. Bake for 14 to 15 minutes, until the cheese is bubbly and the crust is golden.
10. Let the cupcakes cool in the tin for 5 minutes, then remove and serve hot.
Notes
You can substitute Beef pepperoni with grilled chicken or keep it vegetarian by using mushrooms or bell peppers.
Store leftovers in an airtight container in the fridge for up to 4 days.
Freeze individually wrapped cupcakes for up to 2 months.
Reheat in the oven at 350°F for best results.
