Description

Ingredients

2 pounds ground beef

1 teaspoon salt

1/2 teaspoon pepper

8 ounces Tillamook Blue Cheese cut into cubes

8 ounces Palmetto Cheese Original Style Spread

8 ounces Tillamook Mozzarella cut into cubes

4 hamburger buns from Nature’s Own or Dave’s Killer Bread or Pepperidge Farm

Lettuce

Sliced tomatoes

Grilled sweet onions

Sliced pickles

Two 7 ounce jars sliced pimientos drained

Three 10 ounce bricks Cabot Sharp Cheddar grated

1 cup mayonnaise


Instructions

1. Mix the ground beef salt and pepper lightly until just combined and form the mixture into eight equal portions

2. Press a cube of cheese or a spoonful of cheese spread into the center of each portion and seal the meat around it fully

3. Shape each filled portion into a patty about one quarter inch thick making sure the cheese is completely enclosed

4. Preheat a grill or skillet to medium high heat and cook the patties until they reach your preferred doneness without pressing down

5. Toast the buns and prepare lettuce tomatoes onions and pickles for serving

6. Blend the drained pimientos until smooth then mix with grated cheddar until creamy before adding mayonnaise to finish the spread

7. Assemble the burgers with toppings and add pimiento cheese if desired

Notes

Using chilled cheese helps it stay in place during cooking and prevents leaking

Chilling the shaped patties for a short time makes them firmer and easier to grill

Selecting buns with good structure provides a balanced texture and keeps the burger from becoming too soft
