Description
A creamy, no bake Peanut Butter Mousse with Chocolate Ganache that blends silken tofu, smooth peanut butter, and a glossy dark chocolate coconut ganache. Light in texture, rich in flavor, and simple to prep ahead.
Ingredients
For the Peanut Butter Mousse
350 grams silken tofu, well drained
3 to 4 tbsp smooth peanut butter, to taste
3 to 4 tbsp agave syrup or maple syrup, to taste
1 tsp alcohol free vanilla flavor
1 small pinch fine salt
For the Chocolate Ganache
100 grams 70 percent dark chocolate chips or chopped dark chocolate
Cream from one 400 g can full fat coconut milk, chilled, mostly the solid cream, a little liquid is fine
Optional Garnishes
Shaved dark chocolate
Chopped roasted peanuts
Fresh berries
Instructions
1. Refrigerate the can of coconut milk for at least 1 hour so the cream rises to the top and firms up.
2. In a blender, add silken tofu, peanut butter, agave or maple syrup, alcohol free vanilla flavor, and a pinch of salt. Blend until completely smooth and creamy. Taste and adjust sweetness or peanut butter to preference.
3. Spoon the mousse into 2 small jars or ramekins. Cover and refrigerate while you make the ganache.
4. Melt the dark chocolate in short microwave bursts, stirring between each, or use a double boiler with gentle heat.
5. Scoop the thick coconut cream from the chilled can. Whisk the cream into the melted chocolate until glossy and smooth. A small splash of the coconut liquid is fine if it sneaks in.
6. Pour the ganache over the chilled mousse. Refrigerate for about 1 hour, until the ganache is set but still silky.
7. Garnish with shaved chocolate, chopped peanuts, or berries just before serving. Serve chilled.
Notes
Use alcohol free vanilla flavor for the mousse.
For a sweeter ganache, whisk in 1 to 2 tsp maple syrup after the chocolate has melted.
If the mousse seems loose, chill longer until softly set.
Nut free option, replace peanut butter with sunflower seed butter or tahini.
Texture tip, fully drain the tofu and blend until ultra smooth for a light, airy mousse.
Flavor idea, add a pinch of cinnamon to the mousse or flaky sea salt on top for contrast.
