Description

These no-bake Peanut Butter Cookie Dough Bites are quick, easy, and naturally sweetened with maple syrup. They make a delicious snack or dessert with the rich taste of peanut butter and chocolate.


Ingredients

3/4 cup natural peanut butter

1 cup almond flour

1/4 cup + 2 tbsp pure maple syrup

1/2 cup mini chocolate chips

1 tsp alcohol-free vanilla flavor

Pinch of salt


Instructions

1. In a large bowl, mix together the peanut butter, maple syrup, and vanilla flavor until smooth.

2. Stir in the almond flour, salt, and mini chocolate chips and mix well.

3. Refrigerate the dough for 20 minutes to firm up.

4. Scoop out about 1 tablespoon of dough using a cookie scoop or spoon, then place on a parchment-lined tray.

5. Store in the fridge in a sealed container for up to 2 weeks or freeze for up to 3 months.

Notes

For extra texture, roll bites in crushed nuts or shredded coconut.

If the dough is too sticky, add a little more almond flour.

For a firmer bite, freeze before serving.
