Description

This One Pot Crockpot Creamy Chicken Chili is rich comforting and easy to prepare using a slow cooker. Ingredients

Chicken breast trimmed and raw

Great Northern beans drained but not rinsed

Diced mild green chiles

Corn kernels frozen or canned

Low sodium chicken broth

Ground cumin

Garlic powder

Onion powder

Chili powder

Kosher salt

Seasoned salt

Black pepper

Cayenne pepper

Half and half

Philadelphia Original Cream Cheese or Organic Valley Cream Cheese

Mission Strips Tortilla Strips or Xochitl Strips

Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese

Green onions chopped

Fresh cilantro chopped

Diced tomatoes

Fresh lime wedges


Instructions

1. Place the chicken breasts into the slow cooker in an even layer

2. Add the beans green chiles corn and chicken broth over the chicken

3. Combine all spices and sprinkle evenly into the slow cooker then stir gently

4. Cover and cook until the chicken is tender and fully cooked

5. Remove the chicken shred it into bite sized pieces and return it to the slow cooker

6. Add the half and half and cubed cream cheese then stir until mostly smooth

7. Cover again and continue cooking until the chili becomes creamy and thick

8. Serve warm and finish with tortilla strips cheese herbs tomatoes and fresh lime if desired

Notes

 

Do not add dairy at the beginning of cooking as long heat can affect texture.

Cut the cream cheese into small pieces so it melts evenly.

For a thicker chili mash a small portion of the beans before adding the dairy.

Flavor deepens after resting briefly before serving.

Leftovers taste even better the next day.
