This Oatmeal Apple Breakfast Bake is a warm, comforting baked oatmeal made with rolled oats, cozy spices, and tender apples. It is perfect for make ahead breakfasts, family mornings, or an easy brunch option.
Ingredients
3 cups (300 g) old fashioned rolled oats
1 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
3/4 teaspoon salt
1/2 cup (106 g) lightly packed brown sugar
2 1/2 cups milk
2 large eggs
1 teaspoon Simply Organic Alcohol Free Vanilla Flavor or Watkins Clear Vanilla Flavor
4 tablespoons butter or coconut oil, melted
2 to 3 large Honeycrisp or Gala apples, peeled, cored, and diced
Instructions
1. Preheat the oven to 325°F. Lightly grease an 8×12 inch or 9×13 inch baking pan, or a 9×9 inch pan for a thicker bake.
2. In a large bowl whisk together the rolled oats, baking powder, cinnamon, nutmeg, salt, and brown sugar until evenly combined.
3. In a separate bowl whisk together the milk, eggs, vanilla flavor, and melted butter or coconut oil until smooth.
4. Pour the wet mixture over the dry ingredients and stir until all the oats are well coated and the mixture looks creamy.
5. Spread the diced apples evenly over the bottom of the prepared baking dish.
6. Pour the oatmeal mixture over the apples, making sure it is distributed evenly in the pan.
7. Bake for 35 to 45 minutes until the top is golden, the edges are set, and the center is just firm with no excessive jiggle.
8. Let the bake cool for a few minutes, then slice and serve warm or at room temperature with a splash of milk or a spoonful of yogurt if desired.
Notes
Add ins: Stir chopped nuts, raisins, or dried cranberries into the dry ingredients for extra texture and flavor.
Apples: Use 2 to 3 tart sweet apples such as Honeycrisp or Gala. For a classic baked oatmeal without fruit you can omit the apples.
Pan size: A 9×9 inch pan will give a thicker slice, while a 9×13 inch pan will bake up thinner. Adjust baking time slightly and watch for a set center.
Make ahead: Assemble the recipe in the pan, cover, and refrigerate overnight. Bake in the morning until golden and set.
Storage: Refrigerate leftovers in an airtight container for up to 4 days. Reheat individual portions in the microwave or warm in the oven.
