Ingredients
FOR THE CRUST:
2 1/2 cups chocolate baking crumbs (225g)
6 tbsp unsalted butter
FOR THE FILLING:
24 oz cream cheese, softened (3 packages)
1/2 cup granulated sugar (96g)
3 tbsp heavy whipping cream
2 tsp alcohol-free vanilla flavor (Simply Organic or Watkins Clear Vanilla Flavor)
3 cups brownie mix (dry) (375g)
FOR THE TOPPING:
1 cup heavy whipping cream
1/2 cup powdered sugar
FOR THE GLAZE:
3 tbsp brownie mix (dry) (23g)
3 tsp vegetable oil
4 tbsp heavy whipping cream
Instructions
1. Prepare a 9-inch springform pan by lightly greasing the edges with cooking spray, then wipe gently with a paper towel.
2. In a microwave-safe bowl, melt the butter for 45 to 60 seconds. Stir into the cookie crumbs until fully combined. Press firmly into the bottom and sides of the pan to form a crust.
3. Beat the cream cheese on medium-high speed for 2 to 3 minutes until light and fluffy.
4. Slowly add sugar, heavy cream, and vanilla flavor. Beat until smooth and creamy, scraping the bowl as needed.
5. Gradually add dry brownie mix and beat until fully blended. Spread filling evenly into the prepared crust. Cover and refrigerate for 4 hours until firm.
6. Chill the mixing bowl and whisk attachment for 5 to 10 minutes. Whip the heavy cream until bubbly, then gradually add powdered sugar. Beat until stiff peaks form. Spread or pipe whipped cream over cheesecake.
7. In a small bowl, whisk together brownie mix, vegetable oil, and heavy cream until smooth. Adjust thickness with more cream if needed. Drizzle glaze over cheesecake before serving.
Notes
Chill the cheesecake for at least 4 hours for best results.
Use a hot knife for clean slices.
Store leftovers covered in the refrigerator for up to 5 days, or freeze individual slices for longer storage.
