Description

Crispy, cheesy, and bursting with bold flavor, this Mexican Pizza Recipe is made with golden fried tortillas, seasoned ground beef, refried beans, enchilada sauce, and all your favorite toppings.


Ingredients

FOR THE TORTILLAS

1/4 cup vegetable oil (Use 1-2 tablespoons for a lighter fry)

16 corn tortillas (6-inch)

FOR THE MEXICAN PIZZAS

2 cups refried beans, warmed (16 ounce can)

1 teaspoon vegetable oil

1 pound ground beef

1 tablespoon taco seasoning

2 cups enchilada sauce (or taco sauce)

8 ounces cheddar cheese, shredded

TOPPINGS

Diced tomato

Sliced black olives

Sliced green onion

Hot sauce

Salt to taste


Instructions

1. Heat vegetable oil in a skillet over medium heat.

2. Add tortillas one or two at a time and fry each side for 2-3 minutes until golden and crispy.

3. Place tortillas on paper towels to drain excess oil and lightly season with salt.

4. Preheat oven to 350°F (175°C).

5. Heat 1 teaspoon of vegetable oil in a pan, add ground beef, and cook for 6–7 minutes until browned.

6. Add taco seasoning and 1/4 cup water. Simmer for 10 minutes.

7. Lay out 8 fried tortillas on a baking sheet.

8. Spread enchilada sauce, then a layer of refried beans on each.

9. Add a layer of seasoned beef.

10. Top with the remaining 8 tortillas.

11. Add more sauce and sprinkle shredded cheddar cheese on top.

12. Bake for 10 minutes or until the cheese is melted and bubbly.

13. Remove from oven and top with diced tomatoes, black olives, green onions, and hot sauce.

14. Serve immediately.

Notes

Instead of frying the tortillas, you can lightly coat them with oil and air fry them at 375°F for 6–8 minutes until crispy.

You can also pan fry with only 1–2 tablespoons of oil for a lighter version.

Use salsa or taco sauce in place of enchilada sauce if needed.
