Description

A wholesome Mediterranean Breakfast Pita made with eggs, hummus, cucumber, tomato, and parsley. This quick and fresh breakfast is packed with protein, fiber, and flavor, perfect for a balanced morning meal.


Ingredients

4 large eggs, at room temperature

Salt and black pepper

2 whole-wheat pita breads (Kontos, Joseph’s, or Cedar’s brand)

½ cup hummus (4 ounces)

1 medium cucumber, thinly sliced

2 medium tomatoes, diced

1 handful fresh parsley leaves, chopped

Optional: Texas Pete® Original Hot Sauce, Crystal® Hot Sauce, or Sriraja Panich Hot Sauce


Instructions

1. Fill a medium saucepan with water and bring it to a boil.

2. Gently add the room-temperature eggs and cook for 7 minutes.

3. Drain, cool under cold water, peel, and slice into ¼-inch pieces.

4. Spread 2 tablespoons of hummus inside each pita pocket.

5. Layer with cucumber slices, diced tomatoes, and sliced eggs.

6. Season with salt and black pepper.

7. Add chopped parsley and drizzle with your preferred hot sauce.

8. Serve immediately and enjoy.

Notes

To save time, boil the eggs the night before and refrigerate them.

Keep sliced cucumbers and diced tomatoes stored separately in airtight containers for freshness.

Lightly toast pita before filling for extra flavor and warmth.

Assemble just before serving to maintain the best texture and taste.
