Ingredients
Full fat coconut cream chilled
Fresh or canned mango diced
Honey or sugar free maple syrup adjusted to taste
Ripe banana peeled and sliced
Fresh lime juice optional
Coconut milk optional if mixture is too thick
Instructions
1. Prepare ripe mango by slicing the cheeks away from the pit and scooping out the flesh, then measure the required amount
2. Peel and slice the banana and chill briefly for a creamier texture
3. Scoop the thick portion of chilled coconut cream into a blender or food processor
4. Add mango, banana, sweetener, and optional lime juice to the blender
5. Blend until completely smooth, thick, and glossy, scraping down the sides as needed
6. Taste and adjust sweetness if necessary, then blend again briefly
7. Pour the mixture into popsicle molds leaving space at the top for expansion
8. Insert popsicle sticks and tap molds gently to remove air bubbles
9. Freeze on a flat surface until fully solid
10. Run warm water over molds briefly and gently release the popsicles.
