Make-Ahead Freezer Breakfast Sandwiches are the perfect solution for busy mornings. They’re hearty, protein-rich, and easy to reheat for a quick, satisfying meal any day of the week.
Ingredients
12 large eggs
2 tablespoons milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
12 slices fully cooked turkey sausage patties (Applegate Naturals Turkey Sausage Patties)
12 English muffins (Thomas’ Original or Dave’s Killer Bread English Muffins)
12 slices cheddar cheese (Tillamook Medium Cheddar or Cabot Sharp Cheddar Cheese)
Instructions
1. Preheat the oven to 325°F and grease a 9×13-inch baking dish with butter or olive oil spray.
2. Whisk the eggs, milk, salt, and pepper until smooth. Pour the mixture evenly into the pan.
3. Bake for 18–22 minutes, or until the center is set but not overcooked. Let cool completely.
4. Cut the baked eggs into 12 equal squares.
5. Slice English muffins in half and layer with egg, cheese, and a turkey sausage patty.
6. Top with the other half of the muffin and assemble all 12 sandwiches.
7. If serving immediately, heat in the oven at 350°F for about 5 minutes, until the cheese melts.
8. To freeze, wrap each sandwich in parchment paper or foil and store in a freezer-safe bag for up to 1 month.
9. To reheat, thaw overnight in the fridge, unwrap, and microwave on defrost (50% power) for 40–60 seconds. Flip, then heat for 10–30 seconds on high.
10. Alternatively, reheat in the oven or toaster oven at 350°F for 10–15 minutes until warmed through.
Notes
Use high-quality English muffins that toast well for the best texture.
Avoid overbaking the eggs to keep them soft and fluffy when reheated.
For flavor variation, try adding spinach, roasted red peppers, or a few drops of Texas Pete Original Hot Sauce or Crystal Hot Sauce before serving.
