Make-Ahead Breakfast Sandwiches are easy, delicious, and freezer-friendly. Perfect for busy mornings, these sandwiches combine fluffy eggs, melty cheddar, and turkey sausage on soft English muffins.
Ingredients
12 large eggs
2 tablespoons milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
12 slices turkey sausage patties (Butterball Turkey Breakfast Sausage Patties)
12 English muffins (Quaker cereals bread)
12 slices cheddar cheese (Tillamook Medium Cheddar or Cabot Creamery Cheddar)
Instructions
1. Preheat oven to 325°F and grease a 9×13-inch baking pan with butter or olive oil spray.
2. Whisk eggs, milk, salt, and pepper until smooth and slightly frothy.
3. Pour egg mixture evenly into the pan and bake for 18–22 minutes until the center is just set.
4. Allow eggs to cool, then slice into 12 squares.
5. Toast English muffins lightly to keep them from becoming soggy.
6. Assemble each sandwich with one egg square, a slice of cheddar cheese, and a turkey sausage patty.
7. Top with the other half of the muffin and press gently.
8. If eating immediately, heat sandwiches in the oven at 350°F for 5 minutes until cheese melts.
9. To freeze, wrap each sandwich in parchment or wax paper and store in a freezer bag for up to 1 month.
10. To reheat, thaw overnight in the fridge, then microwave for 40 seconds to 1 minute on defrost, flip, and heat 10–30 seconds on high or bake at 350°F for 10–15 minutes.
