This Chicken Cordon Bleu Casserole (low-carb) is a creamy, cheesy, high-protein comfort dish made with shredded chicken, turkey ham, and Swiss cheese. It’s an easy, one-pan dinner that combines classic flavor with a modern healthy twist. Perfect for family meals or make-ahead dinners.
Ingredients
6 cups shredded cooked chicken (about 2 lb)
6 oz turkey ham, cut into bite-size pieces
4 oz butter, melted
6 oz Philadelphia Original Cream Cheese or Green Valley Creamery Cream Cheese (softened)
1 tbsp Dijon mustard
1 oz lemon juice
1/2 tsp salt
1/4 cup chicken broth
5 oz Tillamook Swiss Cheese, sliced
Instructions
1. Preheat oven to 350°F and prepare a 9×13-inch baking dish.
2. Spread the shredded chicken evenly on the bottom of the dish.
3. Layer the turkey ham pieces on top of the chicken.
4. In a bowl, mix melted butter, softened cream cheese, Dijon mustard, lemon juice, chicken broth, and salt. Blend until smooth and thick.
5. Spread the creamy sauce evenly over the chicken and turkey ham.
6. Top with Tillamook Swiss Cheese slices or Cabot Creamery Baby Swiss.
7. Bake uncovered for 30–40 minutes until hot and bubbly.
8. Switch to broil for the final 2 minutes for a golden, slightly crispy cheese topping.
9. Remove from the oven and let rest for 5 minutes before serving.
Notes
If your chicken is dry, mix some sauce into the chicken before baking for a creamier result.
You can assemble the casserole up to a day ahead and refrigerate it before baking.
Store leftovers in airtight containers in the fridge for up to 3 days.
To reheat, cover with foil and warm at 325°F for 15–20 minutes.
For freezing, assemble but do not bake; wrap tightly and freeze up to 2 months.
Serve with a green salad or steamed broccoli for a balanced low-carb meal.
