Description

This lemon pizza recipe features a bright lemon brine, creamy mozzarella, and fresh herbs on a crisp, golden crust. It’s a refreshing twist on classic pizza, perfect for a light meal or summer dinner.


Ingredients

1 ball easy pizza dough (or store-bought dough)

2 tablespoons extra virgin olive oil

1 tablespoon water

1 tablespoon fresh parsley, chopped

1 small garlic clove, grated

1 teaspoon lemon zest

1 teaspoon lemon juice

1/4 teaspoon fine salt

1/4 teaspoon black pepper

5 oz fresh mozzarella (or 1/2 to 1/3 cup shredded firm mozzarella)

1 tablespoon lemon juice (to finish)

2 tablespoons grated parmesan cheese

1 tablespoon fresh parsley (to finish)

Freshly ground black pepper, to taste


Instructions

1. Prepare the pizza dough using a no-knead method or your preferred store-bought version. Let it proof for 1 hour.

2. Preheat your oven to 475°F (245°C). If not using a pizza stone, invert a rimmed baking sheet and place it on the lowest rack to preheat.

3. Prepare the cheese by slicing the fresh mozzarella into 1/2-inch pieces. Pat dry if watery. If using shredded mozzarella, set aside.

4. Make the lemon brine by adding olive oil, water, chopped parsley, garlic, lemon zest, lemon juice, salt, and black pepper to a jar. Shake until emulsified.

5. Shape the dough onto parchment paper into a 9×13 inch oval or rectangle. Make dimples across the surface with your fingers.

6. Pour or brush the lemon brine onto the dough, allowing it to collect in the dimples. Add the mozzarella evenly on top.

7. Slide the pizza (with parchment) onto the preheated pizza stone or baking sheet. Bake for 8-10 minutes, or until the cheese and crust are golden brown.

8. Remove from oven. Drizzle 1 tablespoon of fresh lemon juice on top. Add parmesan, parsley, and freshly ground black pepper to finish.

9. Slice and serve immediately while hot and crisp.

Notes

No pizza stone? Use a preheated inverted baking sheet on the lowest oven rack to simulate a pizza oven and ensure a crisp crust.

Leftovers can be stored in the fridge for up to 1 day, or frozen for up to 3 months. Reheat in a hot oven until crispy.
