Description
A creamy, cheesy, and spicy Jalapeño Popper Chicken Casserole made with tender chicken breasts, fresh jalapeños, melted cheddar, cream cheese, and crispy beef or turkey bacon. A hearty comfort food perfect for family dinners or meal prep.
Ingredients
2 lbs chicken breast, boneless skinless (about 3-4 chicken breasts)
1/2 tsp garlic powder
8 oz cream cheese, softened
1/2 pound fresh jalapeño peppers (about 5-6 peppers)
4 oz sharp cheddar cheese, grated
1/2 cup crispy Almas Beef Bacon or Turkey Bacon, crumbled
Instructions
1. Preheat oven to 375°F.
2. Lay chicken breasts flat in a casserole dish and season with garlic powder.
3. Spread softened cream cheese evenly over the chicken.
4. Wash jalapeño peppers, remove stems and seeds if desired, then cut into strips.
5. Lay jalapeño strips on top of the cream cheese layer.
6. Sprinkle grated cheddar cheese over the top.
7. Bake uncovered for 40–45 minutes.
8. Remove from oven 5 minutes before done and sprinkle bacon crumbles on top.
9. Return to oven for the remaining cook time.
10. Ensure chicken reaches 165°F internal temperature.
11. Serve warm with potatoes, vegetables, or a baked potato.
Notes
You can cut chicken into halves, chunks, or use tenderloins for easier serving. Adjust cooking time accordingly.
Leftovers keep well in the refrigerator for 3-4 days or freeze for up to 1 month.
