Description
Crispy Homemade Granola Clusters made with oats, nuts, seeds, maple syrup or honey, coconut oil, and natural vanilla flavor. Perfect for breakfast, snacks, or topping yogurt and smoothie bowls.
Ingredients
4 cups old fashioned rolled oats
1 and 1 half cups raw nuts and seeds such as pecans and pepitas
1 teaspoon fine grain sea salt
1 half teaspoon ground cinnamon
1 half cup melted coconut oil or olive oil
1 half cup maple syrup or honey
1 teaspoon alcohol free vanilla flavor such as Alcohol Free Simply Organic or Watkins Clear Vanilla Flavor
Two thirds cup dried fruit such as cranberries
Optional mix ins such as chocolate chips or coconut flakes
Instructions

2. Preheat oven to 350 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
3. Combine oats pecans pepitas salt and cinnamon in a large mixing bowl and stir well.
4. Pour in the melted coconut oil or olive oil maple syrup or honey and alcohol free vanilla flavor. Mix until all oats and nuts are fully coated.
5. Spread mixture evenly on the prepared baking sheet pressing lightly to help form clusters.
6. Bake for 21 to 24 minutes stirring halfway. For bigger clusters gently press the granola back down after stirring.
7. Remove from oven and let the granola cool completely without touching for at least 45 minutes.
8. Once cooled add dried fruit and optional mix ins such as chocolate chips or coconut flakes.
9. Break into clusters using your hands or stir for smaller pieces.
10. Store in an airtight container at room temperature for up to 2 weeks or freeze up to 3 months.

Notes
Use certified gluten free oats if needed.
For a nut free version replace nuts with extra seeds such as pepitas or sunflower seeds.
Add coconut flakes halfway through baking if you prefer toasted coconut.
Granola is delicious on its own with milk yogurt fresh fruit or as a crunchy topping for salads.
