Description

This homemade BBQ chicken pizza features a smoky, tangy barbecue sauce, tender chicken, melty cheeses, and a golden crisp crust. Perfect for a flavorful and easy family dinner.


Ingredients

1/2 recipe homemade pizza dough (or 1 lb. store-bought pizza dough)

1 Tablespoon (15ml) olive oil, divided

1 Tablespoon (8g) cornmeal

1/3 cup + 2 Tablespoons (130g) your favorite barbecue sauce

1 cup chopped or shredded cooked chicken (about one 8-ounce breast)

2/3 cup (70g) shredded mozzarella cheese

2/3 cup (70g) shredded smoked gouda cheese

1/2 small red onion, thinly sliced

1 Tablespoon chopped fresh cilantro (or basil), for topping


Instructions

1. Prepare the pizza dough through step 3 or thaw store-bought dough.

2. Preheat oven to 475°F (246°C) and grease a baking sheet or pan with half the olive oil. Sprinkle cornmeal over the surface.

3. Punch down the dough, divide, and shape half into a 12-inch round. Create a raised edge by pinching the rim.

4. Brush dough with remaining olive oil and make small dents with your fingers to avoid bubbling.

5. Spread 1/3 cup BBQ sauce evenly over dough. Toss cooked chicken in remaining BBQ sauce and distribute evenly over pizza.

6. Top with mozzarella, smoked gouda, and thinly sliced red onions.

7. Bake for 14–15 minutes until crust is golden brown and cheese is bubbling.

8. Remove from oven and sprinkle with fresh chopped cilantro or basil.

9. Let rest for 1–2 minutes before slicing and serving.

Notes

Wrap leftover slices in plastic wrap and store in the fridge for up to 5 days.

Freeze baked slices for up to 3 months. Reheat in oven at 350°F (177°C) until warmed through.

If you don’t have gouda, substitute with additional mozzarella or cheddar.

Whole wheat dough can be used for added fiber and a nutty flavor.
