Description
These High Protein Pancake Bites (Muffin Tin) are fluffy, bite-sized pancakes packed with protein and flavor. Perfect for meal prep, busy mornings, or post-workout snacks.
Ingredients
1 cup Kodiak Cakes Protein Pancake Mix or Birch Benders Protein Pancake Mix
1/2 cup Chobani Nonfat Greek Yogurt
2 tbsp mini chocolate chips, plus more for topping
1/2 tsp Alcohol-Free Simply Organic Vanilla Flavor or Watkins Clear Vanilla Flavor
1/2 tsp baking powder
1/4 cup Silk Unsweetened Almond Milk or Califia Farms Unsweetened Almond Milk
2–4 tbsp water, adjust for batter thickness
Instructions
1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin with olive oil or coconut oil spray.
2. In a mixing bowl, combine pancake mix, Greek yogurt, baking powder, almond milk, vanilla flavor, and water. Stir until smooth.
3. Fold in mini chocolate chips and mix gently.
4. Spoon batter into mini muffin tin, filling each about three-quarters full.
5. Add a few extra chocolate chips on top of each cup for extra flavor.
6. Bake for 10–12 minutes until golden and a toothpick inserted comes out clean.
7. Cool for 5 minutes before removing from the tin. Enjoy warm or store for later.
