Description
This Greek Yogurt Quick Bread is a moist, tender, and versatile loaf that requires no yeast or kneading. Perfect for breakfast, snacks, or sandwiches, it’s made with simple ingredients and comes together in just minutes.
Ingredients
3 cups all-purpose flour
1 1/2 tablespoons baking powder
1 1/4 teaspoons salt
1 1/2 cups milk (any type)
1 cup Greek yogurt (2%)
Instructions
1. Preheat the oven to 375°F and line a 9×5-inch loaf pan with parchment paper.
2. In a large bowl, stir together flour, baking powder, and salt.
3. Sift the mixture through a fine mesh sieve into another bowl.
4. Add milk and Greek yogurt to the dry mixture.
5. Stir gently with a spatula just until combined. The dough will be thick and sticky.
6. Transfer the dough into the prepared loaf pan and level the top with a spatula.
7. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
8. If browning too quickly, tent loosely with foil or parchment paper during the last 15 minutes.
9. Remove from oven and let cool in the pan for 5 minutes.
10. Transfer to a wire rack to cool for at least 1 hour before slicing.
11. Use a serrated knife to cut into 10 slices and serve.
Notes
Store the bread wrapped in a linen towel at room temperature for up to 2 days, then transfer to an airtight container for up to 2 more days.
To freeze, wrap completely cooled bread and place it in a freezer bag. Freeze for up to 3 months.
For a shortcut version, use self-rising flour and omit the baking powder and salt.
