Description
Garlic Yogurt Cilantro Sauce is a bright and creamy condiment that lifts wraps, bowls, grilled vegetables and proteins with lively herb and garlic notes. This version combines thick plain Greek yogurt with a touch of avocado for silkiness, fresh cilantro for brightness, fresh garlic for savory depth, and jalapeno for a controlled kick. The result is a versatile sauce that is smooth enough to drizzle and sturdy enough to use as a dip.
Ingredients
¾ cup plain Greek yogurt such as Chobani Plain Greek Yogurt or Fage Total Plain Greek Yogurt
¼ avocado, ripe
½ cup fresh cilantro, leaves and tender stems, lightly packed
1 small clove garlic, peeled
½ to 1 jalapeno pepper, cored and chopped
½ teaspoon fine sea salt
Optional: a tiny splash of apple cider vinegar to brighten the flavor
Instructions
Gather all ingredients and make sure cilantro is clean and thoroughly dry before using
Spoon the yogurt into the food processor or blender first, this helps the blades engage the rest of the ingredients smoothly
Add the avocado, cilantro, garlic, jalapeno, and fine sea salt on top of the yogurt
Pulse or blend until the mixture is completely smooth, pause to scrape down the sides as needed for an even texture
Taste the sauce and add a small splash of apple cider vinegar if you want more brightness, adjust jalapeno to increase heat if desired
Transfer the finished sauce to a clean container and chill briefly so flavors meld, stir before serving
Notes
Greek Yogurt: Choose the thickest plain Greek yogurt you can find, full fat will deliver the creamiest texture while low fat will still work as long as the yogurt is not runny
Avocado: Use exactly a quarter of an avocado for balance, more avocado will thicken and add a pronounced avocado flavor, omitting avocado will make the sauce noticeably thinner
Cilantro: Use both leaves and tender stems, lightly pack the measuring cup to avoid excess water that thins the sauce
Jalapeno: Remove the white ribs and seeds to reduce heat, start with half a pepper and add more after blending if needed, serrano peppers can be used but adjust quantity because they are spicier
Storage: Keep the sauce in an airtight glass container in the refrigerator for up to four days, stir before each use to recombine any settling, do not freeze because the texture will separate when thawed
