Description
A creamy and flavorful Garlic Parmesan Chicken & Mushroom Bake made with tender chicken, mushrooms, spinach, and a rich Parmesan garlic sauce. Perfect for a comforting dinner.
Ingredients
4 boneless skinless chicken breasts, thinly sliced
2 tablespoons olive oil
Salt and pepper, to taste
8 ounces sliced mushrooms
1/4 cup butter
2 garlic cloves, minced
1 tablespoon flour
1/2 cup chicken broth
1 cup heavy cream or half and half
1/2 cup grated Parmesan cheese (vegetarian rennet)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup spinach, chopped
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Cook chicken slices for 3–5 minutes per side until browned and no longer pink. Remove and set aside.
2. Add sliced mushrooms to the skillet and cook until tender. Remove and set aside.
3. Melt butter in the skillet, add garlic, and cook until fragrant.
4. Whisk in flour to form a roux, then gradually add chicken broth and heavy cream. Stir until thickened.
5. Add Parmesan cheese, garlic powder, salt, and pepper. Stir until smooth.
6. Mix in chopped spinach and simmer until wilted.
7. Return chicken and mushrooms to the skillet, coat with sauce, and let simmer briefly.
8. Serve hot as is or over pasta, rice, or vegetables.
Notes
This dish can be served with pasta, rice, mashed potatoes, or roasted vegetables.
For extra flavor, add herbs such as parsley, thyme, or basil.
Leftovers can be stored in the refrigerator for up to 3 days or frozen for later use.
