Description

Creamy and comforting, Garlic Mushroom Pasta is a quick, flavor-packed dish featuring sautéed cremini mushrooms, fresh garlic, and parmesan cheese—all ready in under 30 minutes.


Ingredients

4 ounces uncooked pasta

1 tablespoon olive oil

3 tablespoons butter, divided

1/2 medium onion, chopped

8 ounces cremini mushrooms, sliced

3 cloves garlic, minced

1/2 teaspoon Dijon mustard

1/4 cup chicken broth or vegetable broth

1/2 teaspoon lemon juice + zest of 1/2 lemon

1/2 cup freshly grated parmesan cheese

2 tablespoons chopped fresh parsley

Salt & pepper to taste


Instructions

1. Boil a salted pot of water and cook the pasta al dente according to package directions.

2. Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once hot, add onions and mushrooms. Sauté until browned and caramelized, 8–10 minutes.

3. Stir in the remaining butter, garlic, and Dijon mustard. Cook for 1 minute.

4. Pour in the broth, lemon juice, and zest. Let it bubble for a minute.

5. Take the skillet off the heat. Stir in parmesan cheese and parsley.

6. Add a splash of hot pasta water, drain pasta, and toss with the sauce.

7. Season with salt and pepper, then serve immediately.

Notes

You can stretch this to serve 3–4 by adding more pasta if serving with sides.

To double the recipe, increase ingredients proportionally. Cook mushrooms in batches to ensure proper searing.
