Ingredients
Chicken breasts, boneless and skinless
Cream cheese, softened
Garlic cloves, finely minced
Fresh parsley, minced
Fresh chives, finely chopped
Fresh dill, chopped
Finely grated Italian style cheese from Cabot Creamery or Tillamook
Panko breadcrumbs
Garlic powder
Paprika
Salt
Black pepper
Olive oil spray or olive oil
Instructions
1. Preheat the oven and lightly grease a baking dish
2. In a mixing bowl combine cream cheese garlic parsley chives dill grated cheese salt and black pepper until smooth
3. Place chicken breasts on a cutting board and carefully slice a pocket into the thickest side
4. Season the inside of each chicken breast lightly with salt and pepper
5. Spoon the cream cheese mixture evenly into each chicken pocket and gently close
6. In a shallow plate mix breadcrumbs garlic powder paprika salt and pepper
7. Press each stuffed chicken breast into the breadcrumb mixture until fully coated
8. Place chicken into the prepared baking dish and lightly spray or brush with olive oil
9. Bake until the chicken is golden brown and reaches a safe internal temperature
10. Remove from oven and allow to rest before serving
Notes
Use chicken breasts that are similar in size for even cooking
Allow cream cheese to soften fully before mixing for the smoothest filling
Fresh herbs provide the best flavor but dried herbs may be used in smaller amounts
Be careful not to cut through the chicken completely when creating the pocket
Let the chicken rest after baking so the filling sets properly
