Description

A creamy Garlic Cream Sauce with Herbs that blends fresh garlic, bright lemon, tangy Greek yogurt and mayonnaise with a generous handful of herbs to create a versatile dip dressing and sauce. Ready in minutes this smooth green sauce brightens grilled meats roasted vegetables sandwiches and salads while staying light and fresh.


Ingredients

1/2 cup mayonnaise, use Primal Kitchen or homemade

1/2 cup plain Greek yogurt, use Fage Total or Chobani Plain Greek Yogurt

1-2 tablespoons fresh lemon juice to taste

1 teaspoon Dijon mustard

2 garlic cloves peeled

1/2 teaspoon salt or to taste

1/4 teaspoon freshly ground black pepper or to taste

about 1 cup fresh herbs roughly chopped basil parsley dill and mint are recommended some rosemary is optional and very strong

water or extra lemon juice to thin if desired


Instructions

1. Add mayonnaise and plain Greek yogurt to a blender or food processor use Fage Total or Chobani for the yogurt

2. Squeeze in one tablespoon of fresh lemon juice add the Dijon mustard and place the peeled garlic cloves in the blender

3. Add the salt and pepper to the bowl or directly into the blender

4. Measure and add about one cup of fresh herbs basil parsley dill and mint work well roughly chop if needed

5. Blend on high until smooth and the sauce turns a vivid green scrape down the sides and blend again for a completely even texture

6. Taste and adjust seasoning add more lemon if you want brightness or a pinch more salt for depth

7. If the sauce is too thick add a teaspoon of water or an extra splash of lemon juice and blend to loosen

8. Pour the finished sauce into a jar or bowl cover and let it rest for at least ten minutes to let the flavors marry

9. Use immediately as a dip a dressing or a sauce for grilled chicken roasted vegetables sandwiches or pasta

Notes

This sauce will deepen in flavor as it rests which makes the ten minute rest time helpful

If you prefer a milder garlic flavor mince the garlic and let it sit in lemon juice for a few minutes before blending

Avoid overusing rosemary unless you want a pine like note choose mostly basil parsley and dill for a balanced herb profile

Stir the sauce before serving if any separation occurs and keep refrigerated when not in use
