Description
Rich, savory, and perfectly roasted, these Garlic Butter Roasted Mushrooms are a quick and easy side or main dish made with simple ingredients and packed with flavor.
Ingredients
500g / 1lb mushrooms, button or cremini or 8 large portobellos
50g / 3 tbsp unsalted butter, melted
1 tbsp olive oil
2 garlic cloves, finely minced
1/2 tsp salt
1/2 tsp pepper
(OPTIONAL) 1½ tbsp lemon juice
(OPTIONAL) 1 tsp fresh thyme leaves or chopped parsley
Instructions
1. Preheat oven to 220°C / 450°F (or 200°C fan).
2. In a large bowl, toss mushrooms with melted butter, olive oil, garlic, salt, and pepper.
3. Spread mushrooms on a baking tray in a single layer.
4. Roast for 25 minutes without stirring.
5. (Optional) Drizzle with lemon juice and sprinkle thyme or parsley after roasting.
6. Serve immediately while hot and juicy.
Notes
For large mushrooms like portobello, place them cap side down in a snug baking dish. Spoon 1 tsp melted butter on each, drizzle oil, and season. Roast 20-25 minutes without turning. Serve with juices.
These mushrooms go well with polenta, mashed potatoes, garlic sautéed spinach, or over toast with ricotta.
Do not overcrowd the tray, or mushrooms may steam instead of roast.
