Description

A creamy and crispy Fried Egg & Avocado Brioche sandwich made with golden brioche buns, ripe avocado, and perfectly fried eggs. Quick, rich in texture, and satisfying for breakfast or brunch.


Ingredients

3 tbsp olive oil, divided

2 brioche buns (alcohol-free, brands like St. Pierre Bakery or Brioche Gourmet)

2 large eggs

¼ tsp sea salt

¼ tsp black pepper

2 tbsp mayonnaise

1 ripe avocado, halved and sliced lengthwise

2 large tomato slices or 6 small slices


Instructions

1. Heat 2 tablespoons of olive oil in a large cast-iron skillet over medium heat. Place the brioche buns cut side down and toast for 1–2 minutes until golden and crisp, then set aside.

2. Return the pan to medium heat and drizzle with the remaining tablespoon of olive oil to coat the base evenly.

3. Crack one egg into a small bowl and gently slide it into the skillet. Repeat with the second egg if cooking two.

4. Season each egg with sea salt and black pepper. Cook until the edges begin to brown, about 2 minutes, then carefully flip and cook another minute for an over-easy texture.

5. Spread 1 tablespoon of mayonnaise on each bottom bun, then layer with 1 fried egg, tomato slices, and avocado.

6. Spread mayonnaise on the top bun, place it over the fillings, and gently press to assemble.

7. Serve immediately while warm for the best texture and flavor.

Notes

You can use extra virgin olive oil, butter, or avocado oil for cooking depending on your preference.

If you prefer over-medium or over-hard eggs, cook for 2–3 minutes after flipping.

For extra flavor, drizzle with Texas Pete® Original Hot Sauce, Crystal® Hot Sauce, or Sriraja Panich Hot Sauce.

Brioche buns are ideal, but Kaiser rolls, sourdough, or English muffins also work great.

Add baby spinach or arugula for an extra fresh touch.
