Description

These Freezer Oatmeal Cups are an easy and healthy make-ahead breakfast made with oats, banana, cinnamon, and milk. Perfect for meal prep and ready in just 40 minutes.


Ingredients

3 cups old-fashioned oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 cup packed light brown sugar

1/2 cup mashed banana

1 1/2 cups milk (any type: whole, almond, oat, or soy)

2 large eggs

2 tablespoons unsalted butter, melted

1 tablespoon alcohol-free vanilla flavor (Simply Organic Alcohol-Free Vanilla or Watkins Clear Vanilla Flavor)

Fresh or dried fruit for topping (optional)


Instructions

1. Preheat the oven to 350°F and grease a 12-cup muffin tin with cooking spray or butter.

2. In a large bowl, mix oats, baking powder, cinnamon, and light brown sugar.

3. In another bowl, whisk together mashed banana, milk, eggs, melted butter, and vanilla flavor until smooth.

4. Pour the wet mixture into the dry ingredients and stir until just combined.

5. Divide the mixture evenly among muffin cups, filling each to the top.

6. Bake for 25 to 30 minutes until golden brown and firm on top.

7. Let cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.

8. Top with your choice of fruit, nuts, or a drizzle of maple syrup before serving.

Notes

You can replace mashed banana with applesauce or pumpkin puree for a different flavor.

Any type of milk can be used, from dairy to almond or oat milk.

To freeze, wrap each oatmeal cup individually in plastic wrap and store in a freezer-safe bag for up to 3 months.

When ready to eat, heat in the microwave for 30 to 60 seconds until warm.

Add mix-ins like raisins, coconut, or mini chocolate chips for variety.

For added protein, mix in chia seeds or a scoop of protein powder.
