Description
Freezer Breakfast Taquitos are a quick and satisfying breakfast option made with beef sausage, scrambled eggs, and melted cheese wrapped in golden tortillas. Perfect for meal prep and easy to freeze for busy mornings.
Ingredients
1 lb Midamar beef sausage
3 cloves garlic, minced
½ red bell pepper, diced
2 teaspoons taco seasoning
6 eggs
8 small tortillas (Mission or La Banderita)
1 cup shredded cheese (Tillamook Farmstyle Mexican Blend or Cabot Monterey Jack)
Garnish: Crystal Hot Sauce, Daisy Sour Cream, chopped cilantro
Instructions
1. Preheat oven to 400°F and grease or line a baking sheet with parchment paper.
2. Cook beef sausage in a skillet over medium heat until browned.
3. Add minced garlic and diced red bell pepper; sauté for 2–3 minutes.
4. Stir in taco seasoning until evenly coated.
5. In a bowl, whisk eggs, pour into the skillet, and scramble until fluffy.
6. Warm tortillas in a skillet or microwave for 30 seconds.
7. Spoon sausage and egg mixture onto tortillas, add cheese, and roll tightly.
8. Place seam-side down on the baking sheet and bake for 10–15 minutes until golden.
9. Serve with Crystal Hot Sauce, sour cream, and fresh cilantro.
Notes
To freeze: Let taquitos cool completely, then place in a single layer on a baking sheet. Freeze for 1 hour, then transfer to a freezer-safe bag.
Reheat in an oven or air fryer at 375°F for 10 minutes.
For lighter options, use Butterball Turkey Sausage or Impossible Plant-Based Sausage.
Best served with Daisy Sour Cream and a drizzle of Crystal Hot Sauce.
