Description

Ingredients

6 large eggs

6 flour tortillas (8-inch size, Mission Super Soft or La Banderita)

¼ pound turkey sausage or MorningStar Farms Veggie Breakfast Sausage

¼ cup Louisiana Hot Sauce

½ cup Cabot Cheddar or Nikos Feta (shredded)


Instructions

1. Cook the turkey sausage in a skillet over medium heat until browned and cooked through. Set aside.

2. Crack the eggs into a bowl, whisk until smooth, and scramble them in a clean skillet over medium-low heat until softly set. Season with salt and pepper to taste.

3. Lay out the tortillas and layer each with scrambled eggs, cooked turkey sausage, salsa, and shredded cheese.

4. Fold the sides of the tortilla inward, then roll from the bottom up to form a burrito.

5. Place the burritos seam-side down on a parchment-lined baking sheet and freeze for 1 hour.

6. Transfer frozen burritos to a labeled freezer-safe bag or airtight container. Store for up to 3 months.

7. To reheat, wrap a burrito in a damp paper towel and microwave for 2 minutes, flipping halfway through. For a crisp texture, reheat in a toaster oven at 350°F for 10–12 minutes.

Notes
