Description

Enoki Mushrooms with Garlic & Scallion Sauce is a quick, healthy, and flavorful Chinese-style vegetable dish made in just 20 minutes. Perfect for a light main or a savory side.


Ingredients

14 ounces enoki mushrooms (400g)

2 tablespoons oil

2 cloves garlic (minced)

3 tablespoons light soy sauce

½ teaspoon sugar

1 scallion (finely chopped)


Instructions

1. Trim 1-inch from the root section of the enoki mushrooms and separate them into small bundles. Rinse and drain gently.

2. Boil water in a wok and blanch mushrooms in two batches for about 1 minute each. Drain and plate them neatly.

3. In a saucepan, heat oil over medium heat. Add garlic and stir for 10 seconds.

4. Add soy sauce and sugar. Bring to a boil, then turn off heat.

5. Stir in chopped scallions.

6. Slowly pour hot sauce over the mushrooms on the serving plate.

7. Serve warm and enjoy.

Notes

Use fresh enoki mushrooms for the best texture.

Don’t overcook the garlic or scallions to preserve their fresh flavor.

Low-sodium soy sauce can be used to reduce salt content.
